Ingredients
For the pineapple:-
1 pineapple cut into 1 inch pieces

12 slices bacon

1 cup brown sugar
For the mustard dipping sauce:

2 tablespoons Big Island Bees Macadamia Nut Honey

⅓ cup apple cider vinegar
-
1 ½ teaspoons chili powder
-
1 ½ teaspoons smoked paprika
-
1 teaspoon onion powder
-
½ teaspoon fresh ground black pepper
-
½ teaspoon soy sauce
-
1 tablespoon Maiden Hawaii Macadamia Nut Oil

1 teaspoon For Js Kiawe Liquid Smoke
Method
For the pineapple:
Soak toothpicks in water. Cut bacon strips in half crosswise. Wrap each piece of bacon around a chunk of pineapple, securing it with a toothpick. Sprinkle brown sugar over the bacon. Place on a rimmed baking sheet and bake at 375°F until the bacon is cooked, approximately 18 minutes if using a convection oven. Serve with mustard sauce on the side for dipping.
For the mustard dipping sauce:
In a small saucepan, mix together mustard, honey, apple cider vinegar, chili powder, smoked paprika, onion powder, and black pepper. Cook over medium-low heat for 25 minutes. Stir in coconut aminos, coconut oil, and liquid smoke, and cook for an additional 15 minutes. Remove from heat and chill until ready to serve.
