Pineapple Spinach Salad

Summer isn't quite over, and we're savoring every bit of it with our Pineapple Spinach Salad recipe. This quick, no-cook dish is perfect for breezy summer nights when you're craving something light and packed with flavor. And it's our second recipe in our August Flavor of the Month series! (If you missed it, click here to check out last week's Pineapple Martini!)

Our homemade pineapple macadamia dressing is made using authentic Hawaiian ingredients such as Pineapple Puree from Maui Fruit Jewels, Premium Macadamia Nut Oil from Maiden Hawaii, and Pineapple Mustard from Dip into Paradise.

The Pineapple Puree is made with just one single-ingredient (you guessed it -- it's pineapple 😜), so it's just as fresh as if you were to puree a pineapple yourself. The Premium Macadamia Nut Oil is a heart-healthy staple, grown and made locally, that adds richness to the dressing. The Pineapple Mustard adds an unexpected zing with its sweet and tangy flavor combination. 

This mixture is drizzled over a beautiful green salad topped with walnuts for an added crunch!

Ingredients

For the dressing

For the salad

  • 1 bag Fresh Spinach (about 10oz)

  • 6oz Feta

  • 1 cup pineapple chopped into bite size chunks (you can add more pineapple if you like

  • 1 cup walnuts -lightly toasted, but can be raw if preferred

Method

  • Combine all the dressing ingredients in a jar and shake until combined, set aside.

  • In a large salad bowl, add spinach, pineapple chunks, feta and walnuts. Toss.

  • Serve with dressing - Either on the side, or add to spinach mixture and toss (serve immediately)
