Delicious Mochi Pancakes

The texture of these pancakes is more like chewy mochi but they cook up very well and are delicious; just make sure to butter your pan very well so they don’t stick. The edges carmalized into a lovely crispy goodness. I used lilikoi butter as a topping—super yummy! The flavor reminded me of chocolate mochi-covered strawberries we used to buy at the Kapiolani Farmers Market on Oahu. Definitely a taste of aloha!
