Ingredients You'll Need:
- 1 cup pumpkin purée (canned or homemade)
- 1 cup glutinous rice flour FIND HERE  (also called sweet rice flour)
- 1/2 cup coconut milk (or any milk of your choice)
-  2 tbsp Dip into Paradise coconut syrup FIND HERE
- 1 tsp cinnamon
- 1/2 tsp baking powder** (for a little lift)
Instructions:

1. Mix the Batter
In a large bowl, combine the pumpkin purée, coconut milk, maple syrup, and cinnamon. Stir until smooth. Gradually add the glutinous rice flour, baking powder, and salt, mixing until the batter is thick and well combined.

2. Heat the Pan
Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with oil or butter.

3. Cook the Pancakes
Scoop about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes on each side, or until the pancakes are golden brown and set in the middle. Since mochi pancakes are denser, make sure to cook them low and slow to ensure they’re cooked through without burning.

4. Serve & Enjoy
Stack the pancakes high and drizzle with Dip Into Paradise Coconut Syrup and top with  Macadamia Nuts FIND HERE to add a Taste of Aloha!

Tips for the Perfect Pancakes:
Don’t rush the cooking process: Because of the mochi texture, these pancakes take a bit longer to cook than traditional ones. Keep the heat low to medium to prevent burning.
