Ube Rice Cake
This week on the Tastes of Aloha recipe blog, we're whipping up a delicious ube dessert recipe that is going to wow your taste buds!
Ube Rice Cakes are bite-sized desserts made from a creamy combination of coconut milk, rice flour, and evaporated milk.

Ingredients
- 4 cups rice flour
- 1 cup evaporated milk
- 1 14-oz can coconut milk
- 1 cup water
- 1½ cup granulated sugar
- 3 tbsp baking powder
- ½ tsp salt
- 1-3 tsp of Hamakua Coast Premium Ube Syrup
Method

In a large bowl, combine 4 cups rice flour, 1 cup evaporated milk, 1 can coconut milk and 1 cup water. Mix until combine.

Cover with plastic wrap and chill overnight

After chilling add sugar, baking powder and salt to the mixture and stir to combine.

Pour mixture into greased muffin silicone cups to about ¾ full.

Add filled silicone cups to a steamer basket.

Steam on med-high heat for 10-15 minutes or until a toothpick inserted in the centre comes out clean.

Remove the rice cakes from steamer and silicone cups.
