Macadamia Nut Cookies

Santa won't be able to pass up these cookies! 

The base of our Macadamia Nut Cookies is similar to an ooey-gooey traditional chocolate chip cookie, but there's so much more to these tropical treats.

This recipe is packed with the buttery, salty crunch of Island Harvest Macadamia Nuts and balanced with sweet white chocolate chips for a seasonal flavor you won't be able to resist.

These are a wonderful way to share the flavors of Hawaiian Holidays with your ohana (but be sure to keep a few for yourself 😉).

Ingredients

  • ½ cup unsalted butter room temperature

  • ¼ cup light brown sugar packed

  • ½ cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup white chocolate chips

  • ½ cup coarsely chopped roasted Island Harvest Macnuts

Method

  1. Heat oven to 350°F.

  2. In a large mixing bowl using a mixer, cream the butter and sugars until light and fluffy.

  3. Add the egg and vanilla and mix until combined.

  4. Stir in flour, baking soda and salt gradually until just fully combined

  5. Mix in white chocolate chips and chopped nuts.

  6. Using a spoon or medium cookie scoop, scoop cookie dough balls onto a baking sheet lined with parchment paper.

  7. Place cookie dough balls 2 inches apart from each other and bake until bottoms of cookies are slightly golden brown. Cookies will be soft, but will be set for a chewy cookie.

  8. Cool 5-10 minutes; remove from cookie sheet to wire rack.
