Bacon Wrapped Pineapple with Mustard

Our Bacon Wrapped Pineapple with Mustard is a backyard-BBQ must this season. 

The pineapple itself is a delicious blend of savory and sweet, but the Hawaiian mustard dipping sauce is what seals the tropical deal for your tastebuds!

It's made with Passion Habanero Mustard from Aunty Lilikoi, Macadamia Nut Honey from Big Island Bees, Macadamia Nut Oil from Maiden Hawaii Naturals, and Kiawe Liquid Smoke from For Js!

Ingredients

For the pineapple:
  • 1 pineapple cut into 1 inch pieces

  • 12 slices bacon

  • 1 cup brown sugar

For the mustard dipping sauce: 

Method

For the pineapple:

Soak toothpicks in water. Cut bacon strips in half crosswise. Wrap each piece of bacon around a chunk of pineapple, securing it with a toothpick. Sprinkle brown sugar over the bacon. Place on a rimmed baking sheet and bake at 375°F until the bacon is cooked, approximately 18 minutes if using a convection oven. Serve with mustard sauce on the side for dipping.

For the mustard dipping sauce:

In a small saucepan, mix together mustard, honey, apple cider vinegar, chili powder, smoked paprika, onion powder, and black pepper. Cook over medium-low heat for 25 minutes. Stir in coconut aminos, coconut oil, and liquid smoke, and cook for an additional 15 minutes. Remove from heat and chill until ready to serve.
